I tried everything I could think of (putting in shirtless pictures that clearly show the amputee wound, even hiding the second arm under his cloak), but I just couldn't get the AI to make him one-armed. Sorry...

Works for the most part if he is clothed since the AI will then try to hide his second arm behind the cloak.
